Spicy Sausage Stir Fry With Rice Noddles (Thai Style)


This one is another quick and easy meal to prepare and the best part is you will have a ton of leftovers to store in the fridge! I used the same sausages I used in the "English Breakfast" as they are decent and I had some left over. You can obviously add your own favorite plant-based sausage or be crazy and add any type of "meat" you want!


I always take a little extra time to make it look presentable, partly because I have some OCD and lets be honest, no one wants to see a plate piled high that looks like shit!


INGREDIENTS:


Plant-based Sausage (I used these again)

Peppers

Portobello Mushrooms

Tomatoes

Pad Thai Noodles (GF)

Cashews (optional)


SEASONINGS:


Turmeric

Garlic

Onion Powder

Pepper

Sea Salt

As always, you can use whatever you fancy



SAUCE:


Literally any you want. I used a mix of sweet Thai chili and a little hot sauce for extra spice!


DIRECTIONS:


1. If using pad thai noodles, I find them better when you soak them in cold water for around half an hour. If using other noodles, just follow directions on packet.


2. Cut the veggies into small chunks as well as the sausage (or the "meat" you are using). Saute ingrediants together for 15 mins on medium heat. I tossed them in coconut oil. As always, I add the seasoning a few minutes into cooking.


3. The pad Thai noodles take about 5 minutes to cook in boiling water so time that to perfection whilst you are sauteeing your veggies and sausage.


4. Plate. Make it look fancy so you can impress your partner/family/friends. Chop up a little nuts and sprinkle on top. Drizzle over some sauce.


The whole thing takes literally 15 minutes! (minus the soaking noodles time)
